BROCCOLI CHICKEN CASSEROLE 
4-6 chicken breasts
4 bunches broccoli
1 c. mayonnaise
1 can cream of chicken soup
1/4 c. minced onions
1 sm. can black olives, sliced
2 c. grated cheese, Cheddar
Dash Dijon mustard (1 tsp.)
Parmesan cheese
Cracker crumbs

Place broccoli (split into small pieces) in 13 x 9 inch pan. Cover with raw chicken, boned and cut into 1 inch strips or chunks. Mix mayonnaise, soup, onion, olives and 1 cup grated Cheddar cheese. Mix well and spread over chicken covering completely to edges. Top with remaining cheese. Sprinkle with Parmesan cheese and cracker crumbs. Bake at 350 degrees for 1 hour. A quick company meal!
