CASSEROLE OF CHICKEN 
4 chicken breasts, boned and skinned
4 slices Mozzarella cheese
Dijon mustard
Salt to taste
Pepper to taste
Italian seasoning
Parsley to taste
Flour
Olive oil
3 whole tomatoes, skinned and quartered
1/2 pt. fresh mushrooms
4 green onions, chopped
1/2 c. white wine

Flatten chicken breasts and top with cheese slices. Spread with mustard. Roll and secure with toothpicks. Season with salt, pepper and Italian seasoning. Top with parsley. Roll in flour and brown in olive oil.

Put in casserole and decorate with quartered tomatoes. Brown mushrooms in skillet with chopped onions. Spoon over chicken. In drippings, add white wine, heat thoroughly and pour over chicken. Bake at 325 degrees for 30 minutes. Serves 8.
