CARROT RAISIN CAKE 
1/4 c. sugar
1/4 c. oil
1 egg
1 1/2 c. carrots, grated
1/4 c. warm water
1 1/2 tsp. baking soda
1/2 c. plain yogurt
1/2 c. applesauce unsweetened
1 c. white flour
1/2 c. whole wheat flour
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1 c. raisins

Beat sugar, oil, egg well. Add carrots. Dissolve soda in warm water add to mixture. Add yogurt, applesauce. Add spices to flour and 1 cup raisins. Mix all together well. Pour into a greased and floured loaf pan. Bake at 350 degrees for 25 to 30 minutes.
