CARROT RAISIN CAKE 
1 1/2 tsp. baking soda
1/2 tsp. cloves
1/2 tsp. nutmeg
1/4 c. warm water
3/4 c. sugar
2 tsp. cinnamon
1 lg. egg or 2 lg. whites
1/2 c. unsweetened applesauce
1 c. whole wheat flour (I used oat)
1/2 c. plain yogurt
1 1/2 c. shredded carrots
1 c. raisins
1/4 c. vegetable oil
1 c. flour
1/2 tsp. salt (optional)

Heat oven to 325 degrees. Grease 8 to 9 inch square pan. Mix soda and warm water in small bowl. In large bowl, mix carrots, raisins, sugar, yogurt, applesauce, oil, egg, cinnamon, cloves, and nutmeg. Stir in flours, then soda mixture. Spread in pan. Bake 1 hour or until a pick inserted in center comes out clean. Cool on wire rack about 10 minutes before turning out on rack to completely cool. 8 servings. Low fat and cholesterol.
