NEW ORLEANS STYLE RED BEANS | |
1/2 lb. smoked sausage, sliced 1 lb. dry red kidney beans 1 lg. onion Green onions 1/2 lg. bell pepper (green pepper) Celery Garlic 1 lb. pork steak or salted pork Boil salted pork in separate pot to remove most of salt. Throw away water. Chop seasonings fine and cut meat into pieces and slice smoked sausage. Wash beans and put in 5 quart pot, cover with water about 2 inches over beans. Bring to boil and add meats and seasonings, bring to boil, reduce heat and cover. Cook about 2 hours. Add water and stir as needed, add 2 or 3 tablespoons cooking oil, cover, and cook an additional 1 or 2 hours until beans are soft and creamy. Salt and pepper to taste just before you turn off beans. You may not need to add salt. Hint - the oil helps to make the beans creamy. Serve over rice and enjoy! |
