10 MINUTE NEVER FAIL MICROWAVE
PEANUT BRITTLE
 
1 cup sugar
1/2 cup light corn syrup
1 cup raw peanuts
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine first 4 ingredients in 2-quart microwave mixing bowl. Microwave on HIGH for 8 minutes, stirring after 4 minutes. Add butter. Microwave on HIGH 2 minutes. Brittle should not get too brown. Stir in vanilla and baking soda until light and foamy.

Spread on buttered baking sheet as thinly as possible. Cool. Break into pieces.

To get nice even squares, pour into a buttered silicone mold with squares.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Oh, and if you put your buttered baking sheet into a warm oven (200°F) while you're brittle is cooking, it'll be easier to spread... the brittle won't harden as fast on the warm sheet.

I use this recipe and it is full proof, i don't use salt and I nuke it for 6 minutes on 80% then add butter and vanilla, nuke for 2 minutes more on 80%, remove from microwave and add baking soda,stir and pour onto silicone mat and roll with rolling pin to desired thinness, let cool and break apart, everyone loves it, i make it for our church bake sales, it sells very fast.

I haven't tried this yet, and would like to ask something. Does it make a mess in microwave, and does it spit and pop? I love p-nut brittle and have always made it on the stove top.Maybe I am a little uneasy about making it in microwave. Any suggestions? thanks.

I have not tried this yet, but certainly will in a few days. I use to make candy at a candy store. We used tinfoil greased with butter and Rubber gloves greased with butter to spread the brittle..helps to get it as thin as you want.

I got this recipe from a coworker.. I double the peanut amount... Remember this is based on a 1000 Watt Microwave.. My new one is 1300 watts, so I have to adjust to power level 7, or it is burnt... BEST RECIPE EVER !!!

IMPORTANT... I use a 4 cup Pyrex Measuring cup and a sturdy butter knife.. ONLY NOW.... First time I used the Measuring cup, wooden spoon to stir, and silicone spatula... BIG MISTAKE.. CLEANUP NIGHTMARE.... SO MUCH EASIER cleanup with just the cup, and the butter knife... FYI......

After cutting 2 minutes total from cooking time, I get very good brittle EXCEPT just after pouring (I use a cookie sheet covered with parchment, never sticks) little areas of bubbling reddish brown appear. Almost looks like a bunch of miniature volcanoes.

These spots do not crystalize, remaining soft but not sticky. These places taste a bit salty. I have tried less baking soda, different peanuts, slightly shorter and slightly longer cook times, I have also tried a buttered cookie sheet warmed in the oven.

Nothing seems to eliminate these pesky lava-like spots. I never got them in my stove-top brittle. Suggestions, anyone?

I cut the time down to 3 min. 3 min. and 2 min. It gets way to brown when you cook it 10 min. It also has a burnt flavor

Just tried this recipe. I have 1100 watt microwave and 6 minutes is the magic number plus using 1 1/2 tsp. baking soda. I sprayed my cookie sheet with cooking spray and it worked beautifully. Also sprayed the spoons I used. Will use this recipe again and again. Thank you.

This is the perfect peanut brittle, I shortened cook time to total of 8 min, more powerful microwave. I used to stand at the stove forever stirring. NO MORE! this replaces my other recipe. Helps to spray spoon and bowl with non stick, for easier cleanup and have ingredients in condiment cups. warming the buttered pan sure makes it spread with no problem. then i set it outside to cool. Ready to eat up in no time.

The quickest way to cool the peanut brittle, especially in the winter months, is to put it outdoors in the barbecue and close the lid. This keeps anything from getting into it and it cools in no time at all.

Here's a trick. Before putting the mix in the microwave, take a spatula and break up the peanuts as much as you can without breaking too many. It won't REALLY matter but this will help give you more nuts in each piece per bite. The last batch my wife and I made, we found that the peanuts were too spread out. I tried it this new way and the results were great. The six minute cook time seems to be the way to go also.

Easy and tasty! Made it the second time using pecans and pine nuts for a birthday gift. I'm at 4200 ft. elevation, so cut the time to 3 1/2 minutes before the stir, 3 1/2 minutes after the stir, and 1 1/2 minutes after the butter.
