SKILLET CHICKEN & DUMPLINGS 
2 cans (10 1/2 oz. each) chicken a la king
1 can (8 1/2 oz.) green peas, drained
1 can (6 3/4 oz.) chunk breast of chicken, drained
2/3 c. water
1 c. buttermilk baking mix
1/2 tsp. poultry seasoning

In a large skillet, stir chicken a la king, peas, chicken and 1/3 cup water until blended. Bring to simmer over low heat, stirring often.

Meanwhile, stir baking mix and poultry seasoning in a small bowl. Stir in the remaining 1/3 cup water until a soft dough forms. Drop rounded tablespoons (to make 8 dumplings) 1 inch apart onto simmering chicken mixture. Cover and simmer, without lifting cover, about 12 minutes. Then check to make sure tops and sides of dumplings look dry. Makes 4 servings.
