CHICKEN WITH DUMPLINGS | |
6 tbsp. butter 6 tbsp. flour 3 c. chicken broth, hot Cut up chicken for 6 people 2 onions, chopped 2 stalks celery, chopped 1 tsp. sugar 1 tsp. salt 1/4 tsp. ground pepper 1 tsp. basil or sage 2 bay leaves 1/4 tsp. ground cloves 2 cloves garlic, minced 1/2 c. parsley, chopped 1 (10 oz.) pkg. frozen peas and carrots (optional) In 5 quart casserole, melt butter and add flour. Cook gently 5 minutes, stirring. Increase heat and when mixture foams, add broth, stirring constantly until sauce is smooth and thick. To sauce add chicken, onion, celery and seasonings. Bake covered at 350 degrees for 40 minutes. If desired, add peas and carrots, stirring into sauce. Cover and continue cooking for 5 minutes. Add dumpling dough of your choice. Cook covered for 20 minutes. Do not remove cover for these 20 minutes. |
