PEACH FREEZER JAM | |
3 1/2 c. peach pulp 1/4 c. lemon juice 1 (2 oz.) pkg. powdered pectin 1 c light corn syrup 4 1/2 c. sugar Wash, peel and pit about 2 1/2 pounds of peaches. Slice and firmly grind. Mix 3 1/4 cups of pulp with lemon juice. If short of pulp, add enough water to equal exactly 3 1/2 cups. Pour this mixture into 4 quart kettle. Slowly pour in the pectin while stirring vigorously. Then let sit for half an hour. Stir occasionally. Add corn syrup and mix well. Measure sugar exactly into a dry bowl. Gradually stir sugar into fruit pulp. Mix well. Put in jars and put in freezer. |
