PUMPKIN BREAD | |
1 c. honey 1 c. brown sugar 1 c. oil 3 c. pumpkin puree 2 c. chopped walnuts 1 tsp. salt 1 tsp. cinnamon 1 tsp. ground cloves 4 tsp. baking soda 2 c. unbleached white flour 2 1/2 c. whole wheat flour 1/2 c. wheat germ 1 c. raisins 1. Preheat oven to 350 degrees. 2. Combine the honey, brown sugar, oil, pumpkin, walnuts, raisins, salt, cinnamon, cloves and baking soda in a large bowl. Mix well. 3. Stir in the remaining ingredients. 4. Spoon the mixture into 3 well oiled bread loaf pans and bake 1 hour or until done. Cool in the pan for 20 minutes before turning onto a rack to finish cooling. Yield: 3 loaves. |
