POTATOES WHIPPED WITH CHEESE 
3 lbs. potatoes, peeled, cooked and mashed
1 stick butter, softened
6 oz. cream cheese, softened
1/2 c. grated Cheddar cheese
1/2 c. grated Parmesan cheese
1 pt. half and half cream
1 medium green pepper, chopped
1 bunch green onions, sliced
2 oz. jar chopped pimentos, drained

Beat together potatoes, butter, cream cheese, Cheddar cheese, Parmesan cheese with electric mixer. Add enough half and half cream to make fluffy and moist. Fold in green peppers, onions and pimientos. Reserve some onion and green pepper for garnish. Bake uncovered in 2 quart casserole at 350 degrees for 30 minutes.
