PEACH BETTY 
1 (29 oz.) sliced canned peaches
3 c. soft bread crumbs
1/2 tsp. grated lemon rind
2 tbsp. lemon juice
1/4 c. peach syrup
1/4 tsp. salt
2 tbsp. sugar
2 tbsp. butter
1/4 tsp. nutmeg

Drain syrup from canned peaches. Set aside 1/2 cup for later. Scatter bread crumbs on a baking sheet and toast in preheated 400 degree oven for 10 minutes. Scatter 1 cup crumbs over bottom of greased shallow 2-quart baking dish. Top with half each peach slices, lemon rind, lemon juice, nutmeg and sugar. Repeat layers of crumbs, fruit and seasonings.

Finish with remaining crumbs. Dot with butter and sprinkle with peach syrup. Bake 10 minutes in 350 degree oven. Serve warm or cold. Could be served with ice cream or whipped cream.
