SKILLET JALAPENO CORNBREAD 
2 cups cornmeal
2 tbsp. lard
2 tbsp. diced jalapenos
1 cup buttermilk

Preheat oven to 450°F.

Add lard to a medium sized iron skillet and and place in the oven while preparing cornbread mix (you want the lard good and hot).

Combine the remaining ingredients and whisk until smooth.

Once the melted lard is good and hot carefully pour half of the melted lard into the cornbread mixture and stir it in good.

Now pour your cornbread mixture into the skillet and bake at 450°F for about 30 minutes or until top is golden brown.
