OLD FASHIONED BUCKWEAT CAKES 
For delicious "Buckwheats" like Mother used to make -- Soak 1/3 cup breadcrumbs in 2 cups scalded milk for about 30 minutes. Add 1/2 teaspoon salt. Dissolve 1/4 package yeast in 1/2 cup lukewarm water and add this to the crumb mixture. Stir in 1 1/4 cups of buckwheat flour - cover with cloth and let rise overnight. In the morning add 1 tablespoon molasses and 1/2 teaspoon baking soda dissolved in 1/4 cup lukewarm water. Mix thoroughly - then bake on hot griddle. Delicious with butter and maple syrup!
