ITALIAN OMELET 
1 lb. Italian sausage, diced
1 stick pepperoni, diced
1/2 ham, diced
1/2 lb. Ricotta cheese
2 tbsp. grated Romano or Parmesan cheese
1 doz. large eggs
Salt and pepper

Brown sausage. Mix sausage, pepperoni, ham and cheese together. Beat eggs and add to meat mixture along with the salt and pepper.

Heat 1 to 2 tablespoons of olive oil in a cast iron frying pan. Add the meat and egg mixture to the hot pan and bake in a 375 degree oven for 30 minute or until golden brown.
