PEPPERS CON CARNE 
4 lg. green peppers
Boiling water
1 tsp. salt
2 tbsp. butter
1 lg. onion, minced
1 (15 1/2 oz.) can chili con carne with beans (you may use your own homemade
chili)
1 (12 oz.) can whole kernel corn, drained
1/2 c. grated Cheddar cheese

Start heating oven to 350 degrees. Remove tops and seeds from green peppers. cook peppers in boiling salted water to cover, 5 minutes. Drain.

In butter in skillet, saute onion until tender; add chili and corn, heat.

Arrange peppers in baking dish; then fill each pepper with chili mixture, top each with cheese, pour 1/4 inch boiling water into bottom of dish. Bake peppers 30 minutes.
