BAKED GARLIC CLOVES
Use the cloves to make garlic bread, season mashed potatoes, or pep up mayonnaise. A few pureed cloves stirred into sauces will deliver a different flavor.

Large bulbs garlic, unpeeled
Olive oil

Trim the roots, but keep the bulbs unpeeled. Coat each bulb with 1 tablespoon oil, wrap in foil, and bake in a 300 degree oven for 1 1/2 to 2 hours, or until cloves are easily pierced.

Cool, and separate cloves. Squeeze pulp out of skin, and store in a clean glass container. Cover with olive oil. Stored in the refrigerator, it will keep for several weeks.
