LEMON-RAISIN SANDWICH FILLING 
1 c. sugar
2 1/2 tbsp. flour
1 egg
1 tsp. butter
Grated rind of 2 lemons
Juice of 2 lemons
1 c. chopped raisins
1 c. mayonnaise
1 c. nuts (optional)

Blend sugar, flour, egg, butter, lemon rind, and lemon juice in that order. Cook, stirring constantly, until boiling point is reached. Add raisins and cool. Add mayonnaise and nuts. Store in covered container. Keeps well.
