ITALIAN OVEN CHICKEN 
2 chickens, cut up
1/4 tsp. oregano
1/4 tsp. garlic powder (or garlic salt)
1/4 c. flour
1/2 tsp. paprika
2 tsp. salt (scant)
1/2 lb. pork sausage meat
1 1/2 c. cooked tomatoes

Combine flour and seasonings and shake chicken pieces to coat. Cook sausage meat 5 minutes. Stir in 1/2 cup tomatoes. Place chicken in 9 x 13 inch pan, skin side down in a single layer. Bake at 400 degrees for 1 hour. Turn pieces and add remaining tomatoes (1 cup). Bake about 30 minutes longer. Serves 4-6.
