GREEK ROAST LAMB 
4 lb. roast
1 lg. clove garlic, sliced
Oregano, dried leaves
Pepper, ground black

Stab roast 1 1/2" deep and insert garlic slices and 1/4 teaspoon oregano per slit. Coat roast lightly with ground black pepper and rubbed dry oregano leaves. Plan to roast 24 minutes per pound in 350 degree oven. Use a thermometer to test for doneness (175 internal temperature).
