ZUCCHINI BAKE 
2 lbs. grated zucchini, unpeeled
1 c. grated Cheddar cheese
4 eggs
1 c. baking mix (Bisquick or Jiffy)
1/4 c. butter
1 tsp. salt
1/8 tsp. pepper
1/8 tsp. garlic powder

Mix all ingredients. Pour into greased 2 quart casserole dish. Bake at 350 degrees for 1 hour. Test with knife for doneness. Knife should be nearly clean after inserting in center of casserole.
