ZUCCHINI DAVIS 
8 strips bacon
1 lg. onion, chopped
3 c. zucchini, coarsely chopped
1 med. green pepper, chopped
1 (6 oz.) can tomato paste or 8 oz. tomato juice
Pinch of thyme
Salt and pepper to taste
Parmesan cheese

Fry bacon until crisp, crumble and set aside. Reserve 1 tablespoon bacon fat and saute onion until golden. Add bacon and remaining ingredients except cheese. Cook until zucchini is tender. Transfer mixture to 1 1/2 quart casserole. Sprinkle with cheese. Bake at 350 degrees until cheese is melted and golden brown.
