COCONUT - ORANGE CHESS PIE | |
1 c. sugar 1 1/2 tsp. all purpose flour 1 1/2 tsp. yellow cornmeal 3 eggs, beaten 1/4 c. butter, melted 1/4 c. thawed, undiluted orange juice concentrate 2 tbsp. water 1/4 c. flaked coconut 1 unbaked 9 inch pastry shell Combine sugar, flour, cornmeal, mixing well. Combine eggs and next 3 ingredients; add to sugar mixture, stirring well. Add coconut; pour into pastry shell. Bake at 350 degrees for 35 minutes or until filling is set. Yield: one 9-inch pie. |
