MERINGUE CRUNCH COOKIES 
1/2 c. coconut
1 c. sugar
1/2 c. nuts
1/2 c. chocolate chips
1 1/2 c. Peanut Butter Captain Crunch cereal
3 egg whites
Pinch of salt
1 tsp. vanilla

Heat oven to 350 degrees. Beat egg whites until foamy, slowly add sugar and salt. Continue until stiff. Add vanilla. Fold in cereal, nuts, chocolate chips and coconut. Drop teaspoon on foil lined oven rack. Place in oven, turn oven off, leave overnight.
