CHIVE AND CARROT FRITTERS | |
1 c. unbleached white or whole wheat pastry flour 1 tbsp. dried chives 2 tsp. baking powder 1/2 tsp. dried thyme 1/2 tsp. dried parsley 1/2 tsp. salt or herbal salt substitute 3 c. coarsely grated carrots 3/4 c. water or as needed Peanut oil In a bowl combine flour, chives, baking powder, thyme, parsley, salt and carrots. Mix well. Gradually add enough water to form a thick batter. Heat 1 inch of peanut oil in a deep skillet over medium high heat. Drop spoonfuls of batter into the hot oil and cook about 30 seconds, turning once, or until golden. Drain on paper towels before serving. Makes about 20 fritters. |
