NEW YORK CHEESECAKE 
Cookie-Dough Crust
5 (8 oz.) pkgs. cream cheese
1 3/4 c. sugar
3 tbsp. flour
1/4 tsp. salt
5 eggs
2 egg yolks
1 tsp. vanilla
1/4 c. cream or evaporated milk

Make crust. Beat cheese until soft. Mix sugar, flour, salt; blend into cheese. Add eggs and yolks one at a time beating thoroughly after each. Add vanilla and cream. Pour into pan. Bake in preheated oven 475 degrees for 15 minutes. Reduce heat to 275 degrees and bake 1 hour or until center is done. Turn oven off, let set in oven 15-30 minutes. Cool then chill overnight. Top with favorite fruit topping (cherries, blueberries, etc.).

COOKIE DOUGH CRUST:

1 c. flour
1/4 c. sugar
1 egg yolk
1/2 c. butter

Mix flour and sugar. Add remaining ingredients and mix. (May have to add 1-2 tsp. water.) Press in bottom of 9 inch springform pan. Bake bottom 10 minutes in hot oven 400 degrees. Cool to touch. Press remaining dough on sides. Pour in cheese mixture.
