ALMOND DREAM COOKIES 
1 c. flour
1/4 tsp. salt
8 tbsp. butter
1/4 c. sugar
1 egg, separated
1/2 c. almonds, finely chopped

Sift flour and salt 3 times. Cream butter. Add sugar and blend well. Add egg yolk and beat. Add sifted dry ingredients slowly and mix well. Add 1/4 cup chopped almonds. Break into small balls. Dip in lightly beaten egg whites and then in chopped almonds. Place on a greased baking sheet. Make an indentation on top of each ball. Bake in slow 325 degree oven until lightly browned. Remove from oven and fill with maraschino cherry. Serves 24.

NOTE: This is a great cookie for Christmas.
