BLACK TURTLE BEAN SOUP 
Saute:

1/2 lb. bacon
1 1/2 c. chopped onion
1 1/2 c. chopped celery
1 1/2 c. carrots
1 tbsp.minced garlic
1 tsp. bay leaves or 1 whole bay leaf
1 tsp. dry thyme
3 tbsp. ground cumin (Saute only 1 tbsp. now. Save 2 tbsp. for later.)
1/2 tsp. oregano
Salt and pepper to taste

Add all of the above to 1 package of "Black Turtle Beans" plus 10 cups of chicken broth (or 5 CANS of broth). Also add ham hocks at this time.

Bring to boil and simmer 2 hours or until beans are soft. Add remaining 2 tablespoons of ground cumin, 1 teaspoon cajun pepper or chili powder, 4 tablespoons of lime juice or lemon juice. Serve in bowls and drop small portion of sour cream on each serving.
