APPLE BANANA NUT BREAD | |
1/2 c. applesauce 1/2 c. sugar 1/4 c. plain non-fat yogurt 1 tsp. vanilla 3 egg whites 2 c. all-purpose flour 1/2 tsp. salt 1 tsp. baking soda 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/2 c. chopped pecans 1 c. chopped and peeled apples 1 c. ripe bananas, mashed In a large bowl, cream applesauce and sugar. In a separate bowl, mix yogurt and vanilla, add egg whites and beat thoroughly. Add mixture to applesauce and sugar, mix well. Sift together flour, salt, baking soda, cinnamon and nutmeg. Combine dry ingredients in bowl with wet ingredients, mix until well-blended. Add fruit and nuts and mix well. Pour into a well-greased and floured 9 x 5-inch loaf pan. Bake at 350 degrees for 1 hour. Let cool in pan 10-15 minutes. Yield one loaf (16 slices).
