ITALIAN OMELET 
10 eggs
Pepper
Fresh minced parsley
1 tsp. minced onion
Dash of garlic powder
1/2 c. grated Parmesan cheese
Cold cut ends such as capicolla, salami, Italian ham and pepperoni
1 lb. Ricotta cheese

Lightly grease 13 x 9 inch glass baking dish. Beat eggs combined with seasonings. Chop cold cut ends. Mix all ingredients well and pour into glass baking dish.

Bake at 350 degrees for 40 to 45 minutes. Cut into small squares when cooled. Serve warm or at room temperature. Serves 12 to 16.
