CAJUN FRIED TURKEY 
1 (14-16 lb.) turkey
1/4 cup Cajun seasoning (Tony's)
1 (12 oz.) can beer (your choice)
Peanut oil for deep frying

Mix seasoning and beer. Inject mixture into several areas of turkey (leave plastic wrapper turkey is wrapped with on turkey in order to retain mixture in turkey). Let marinate for at least 12 hours in refrigerator.

Before frying, rub turkey thoroughly with Tony's Cajun seasoning.

Cook turkey whole in peanut oil preheated to about 370°F, slowly reduce temperature to 350°F. Cook on a rack in a large pot at 350°F (3 minutes per pound) until golden brown.

Note: "Completely submerge turkey in peanut oil" while cooking.
