MASHED POTATO CASSEROLE | |
8-10 med. potatoes, salt & pepper to taste 1 (8 oz.) pkg. cream cheese, softened 2 eggs, slightly beaten 2 tbsp. all-purpose flour 2 tbsp. minced fresh parsley 2 tbsp. minced chives or 1 sm. onion, grated 1 (3 1/2 oz.) can French fried onions Peel and boil potatoes until tender; drain and put in large bowl of electric mixer. Beat until smooth. Add salt and pepper, then cream cheese; beat again. Blend in eggs, flour, parsley and chives; beat thoroughly. Check seasonings and turn into buttered casserole. Spread slightly crushed onions over top and bake uncovered at 325 degrees for about 30 minutes, until puffy and golden. Serves 8. |
