POPOVER 
1 c. sifted flour
3 eggs
1 c. milk
2 tbsp. melted butter

Put sifted flour in large bowl. In smaller bowl beat eggs lightly. Add milk to eggs and mix well. Add the liquid to flour, beating with mixer or wire whisk to incorporate it. Beat in melted butter.

Grease muffin pans with solid vegetable shortening. Leave an extra glob in middle of the bottom of each cup. Spread some on top of muffin pan between cups and around rims of individual cups. That way the big puffy tops won't stick either. Heat oven to 400 degrees and bake for 40 minutes.
