POT ROAST MEAT LOAF | |
1 lb. lean ground beef 2/3 c. evaporated milk 1/3 c. fine bread crumbs or fine oatmeal 1/4 c. (Heinz) barbecue sauce 1 tsp. salt 1/4 tsp. pepper 3 med. potatoes 3 med. onions 3 med. carrots 2 tsp. parsley flakes 1 tsp. salt 1. Mix first 7 ingredients and shape into a loaf and put in the center of a 13 x 9 x 2 inch pan or equivalent size. 2. Peel and slice potatoes, onions and carrots, mix the parsley, salt and pepper and toss with vegetables and then arrange around the meat loaf. Cover with foil or lid. Bake at 375 degrees for 1 hour, or until vegetables are tender. Uncover last 10 minutes to allow to brown. |
