DIABLO SHRIMP 
1 lb. shrimp, peeled and deveined
1/2 (1 lb.) pkg. linguine or similar pasta, cooked
4 tbsp. (1/2 stick) butter
1 cup chopped red onions
1 or 2 fresh jalapeno peppers, chopped and deseeded
1 or 2 cloves garlic, or to taste
1 (15 oz.) can diced tomatoes (with green chili, garlic, or onion is best), drained
2 tbsp. fresh lemon (or lime) juice
1/2 cup white wine
grated Parmesan cheese, for sprinkling

Cook pasta according to package directions. While pasta is cooking, prepare the shrimp.

Melt butter in a large skillet over medium heat. Add onions and jalapeno pepper. Cook for about 3 minutes.

Add garlic, diced tomatoes and shrimp - sauté until shrimp is opaque (about 2 minutes). Add lemon juice and wine, cook until sauce thickens.

Serve over cooked pasta and garnish with Parmesan cheese.
