CHICKEN RICE SOUP 
8 c. chicken broth
1 med. onion
1 c. chopped celery
1 c. chopped carrots
1/2 tsp. pepper
1/2 tsp. thyme
1 bay leaf
2 c. chicken, cubed
2 c. cooked rice
2 tbsp. lime juice

In large pan combine broth, vegetables, spices. Bring to a boil. Reduce heat, simmer uncovered 15 minutes. Add chicken, simmer until chicken is cooked. Add rice and lime juice before serving.
