CHOCOLATE FUDGE PUDDING CAKE 
1 c. flour
3/4 c. granulated sugar
3 tbsp. unsweetened cocoa, plus 1/4 c. divided
2 tsp. baking powder
1/2 tsp. salt
1/2 c. skim milk
2 tbsp. oil
1 tsp. vanilla
1/2 c. chopped nuts, optional
1 1/4 c. hot tap water
3/4 c. firmly packed light brown sugar

Combine flour, granulated sugar, 3 tablespoons cocoa, baking powder and salt in a 2 quart microproof casserole. Add milk, oil, vanilla and nuts, stirring just enough to blend. In a microproof 2 cup measure or bowl combine hot water with brown sugar and remaining 1/4 cup cocoa; mix well. Pour over batter in casserole, do not stir.
