ORANGE AND CRANBERRY RELISH 
3/4 lb. cranberries, picked over and washed well
1 sm. seedless orange, quartered but not skinned
1/2 c. honey or firmly packed light brown sugar, or to taste
1 tbsp. grated lemon rind

In a food processor fitted with a steel blade, coarsely chop the cranberries and the orange. Transfer the mixture to a stainless steel bowl, stir in the honey and the lemon rind, and combine well. Store the relish in an airtight container in the refrigerator. Makes 8 serving.
