2 1/4 c. sifted cake flour 1 1/2 c. sugar 2 1/2 tsp. baking powder (double-acting) 1 tsp. salt 3/4 c. Crisco shortening 1/2 c. milk 1 tsp. orange extract or 1 1/2 tsp. vanilla 1/2 tsp. almond extract 3 med. eggs, unbeaten 1/4 c. milk Preheat oven to 375 degrees. Grease, then line with waxed paper, bottoms of 2 (1 1/2 inch deep 9 inch) layer pans. Sift together first 4 ingredients into large mixer bowl. Drop in shortening; pour in 1/2 cup of milk, extracts and 1 egg. With electric mixer at low to medium speed, beat 2 minutes. Add 1/4 cup milk, 2 eggs; beat 2 minutes longer. Turn into pans; bake 25 minutes or until done. Cool on wire racks, about 10 minutes. Remove from pans, peel off paper, cool on racks. |
