SWEETHEART COOKIES 
3/4 c. white shortening
1/2 c. sugar
1 egg yolk
1 1/2 c. flour
Powdered sugar
Tart red jelly such as currant or cherry

Cream shortening. Gradually add sugar, then egg yolk, then flour. Knead together. Form into small 1-inch balls and place on greased sheet. Make a depression in the center of each and fill with red jelly. Bake at 350 degrees about 8 minutes.

When done, top is very light, bottom is golden. When cool, roll in powdered sugar. Recipe may be doubled.
