FRUIT RAISIN LOAF | |
1 tbsp. shortening (Crisco) 1 c. sugar 3 c. seedless raisins (1 lb.) 1/2 tsp. cloves 3 tsp. cinnamon 1/2 tsp. salt 3 c. flour 1 tsp. baking powder 1 c. water 1 c. coffee 1 tsp. baking soda Combine shortening, sugar, raisins, spices, and salt with liquid in saucepan; boil 10 minutes. Cool. Add dry ingredients to raisin mixture. Blend well. Pour into loaf pan (9 1/2 x 5 1/2 inches). Bake in slow oven (325 degrees) for 1 hour and 10 minutes. Cool! Ice with frosting made by combining 1/4 cup confectioners' sugar, 1/4 cup water, 1/2 teaspoon vanilla. |
