EASY CHICKEN CACCIATORE 
2 1/2-3 lb. broiler fryer chicken, cut up
2 tbsp. olive oil
2 cans (14 1/2 oz.) Italian style stewed tomatoes
1 can (6 oz.) tomato paste
2 c. sliced mushrooms
1 c. sliced zucchini
1 tsp. basil, crushed
Hot cooked pasta

Brown chicken in oil, 10 minutes, turning occasionally; drain. Add tomatoes, tomato paste, mushrooms, zucchini and basil. Salt and pepper to taste. If desired cover and simmer 25 minutes. Serve over pasta. Garnish with parsley, if desired. 4-6 servings.
