CHICKEN CACCIATORE (LOW CALORIE
RECIPE)
 
2 lbs. boneless chicken breasts cut into 8 pieces
2 c. stewed tomatoes
1 1/2 c. sliced mushrooms
2 sm. green peppers
2 tbsp. finely chopped pimento
6 sprigs parsley
1/4 tbsp. dried thyme
1 bay leaf
1 clove garlic
Salt and pepper

Combine all ingredients in saucepan. Simmer 30 minutes. Uncover and continue cooking until sauce is reduced to desired consistency.
