CHICKEN CACCIATORA - DIET 
2 c. stewed tomatoes
Dash of garlic
1 bay leaf
1/2 tsp. oregano
1/4 tsp. thyme
1 to 1 1/2 c. mushrooms
2 tbsp. onion flakes or 1 med. onion
1 green or red pepper (sweet), chopped
8 pieces chicken, skin removed

Combine all ingredients in Dutch oven; simmer 30 minutes, uncovered, and continue cooking until sauce is reduced to desired consistency. Serves 4. Good served with rice or spaghetti and a salad. Variety: Add celery or green beans or cabbage.
