PEACH COBBLER | |
1 qt. peaches (or berries, apples, etc.) 1/2 c. water 1 1/2 - 2 c. sugar 1/4 c. butter 1 c. self rising flour 1 c. milk 1/2 tsp. ground cinnamon 1 tsp. lemon juice Wash and slice peaches; drain well. In a large saucepan, combine fruit, water and 1/2 to 1 cup of sugar (to taste). Cook until mixture is hot and sugar dissolved. Remove from heat and add lemon juice. Melt butter in 2 quart baking pan. Combine 1 cup sugar and flour in a medium mixing bowl. Stir in milk. Add cinnamon if desired. Pour batter over melted butter in pan, but do not stir. (Batter will rise to top to form a crust.) Bake in a preheated oven at 350 degrees for 45 minutes. NOTE: If desired, use 1 cup all purpose flour with 2 teaspoons baking powder and dash of salt, instead of the self rising flour. |
