MINCEMEAT CHEESE PIE | |
4 (3 oz.) pkgs. cream cheese, softened 1/2 c. sugar 2 eggs 1 tbsp. grated lemon peel 1 tbsp. lemon juice 3/4 tsp. vanilla 1 1/2 c. prepared mincemeat 1 (9-inch) baked pie crust Preheat oven to 375 degrees. In medium bowl with electric mixer at medium speed, beat cream cheese until smooth. Beat in sugar, eggs, lemon peel, lemon juice and vanilla until well blended. Spread mincemeat into pie crust. Top with cheese mixture and bake about 35 minutes until cheese is firm when lightly touched in center. Keep leftovers refrigerated. 6-8 servings. |
