MINCEMEAT CHEESE PIE 
4 (3 oz.) pkgs. cream cheese, softened
1/2 c. sugar
2 eggs
1 tbsp. grated lemon peel
1 tbsp. lemon juice
3/4 tsp. vanilla
1 1/2 c. prepared mincemeat
1 (9-inch) baked pie crust

Preheat oven to 375 degrees. In medium bowl with electric mixer at medium speed, beat cream cheese until smooth. Beat in sugar, eggs, lemon peel, lemon juice and vanilla until well blended. Spread mincemeat into pie crust. Top with cheese mixture and bake about 35 minutes until cheese is firm when lightly touched in center. Keep leftovers refrigerated. 6-8 servings.

I've never made this before until I needed something for a last minute get together. My neighbors were the first to try it. It was lovely! The cheese cake layer complimented the mincemeat layer beautifully! Very luscious, I'll be making it again!
