CAROLINA COLE SLAW | |
1 lg. cabbage, cored and quartered 1 med. size sweet onion, peeled and chopped fine 1/2 red pepper, minced 1/2 green pepper, minced DRESSING: 1 c. sugar 1 tsp. salt 1 tsp. dry mustard 1 tsp. celery seeds 1 c. cider vinegar 2/3 c. vegetable oil 1. With a sharp knife, slice each cabbage quarter very fine. Combine cabbage with onion and pepper in large bowl and toss to mix. 2. Mix sugar, salt, dry mustard and celery seeds in a small saucepan. Add vinegar and oil and bring to a boil over medium heat, stirring until the sugar dissolves. 3. Pour dressing mixture over cabbage mixture and toss. Cool to room temperature and then refrigerate until ready to serve. 6-8 servings. |
