LAYERED FRUIT BREAD | |
1/2 c. butter, softened 1/2 c. sugar 2 eggs 1 1/2 c. flour 3/4 tsp. baking powder 1/2 tsp. salt 3/4 c. chopped peaches 3/4 c. blueberries Cream butter, add sugar gradually, beating until light and fluffy. Add the eggs, one at a time, beating well after each addition. Sift flour, salt and baking powder together and add to creamed mixture and mix just until blended. Spread half the batter in bottom of 2 greased and floured 5" x 2 1/2" x 2 1/4" loaf pans. Place peaches and blueberries on top of batter. Spoon remaining batter over fruit, and bake at 350 degrees for 45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pans transfer to a wire rack and cool completely. |
