YELLOW SQUASH CASSEROLE 
3 lbs. yellow summer squash
1/2 c. chopped onion
1/2 c. cracker crumbs or bread crumbs
2 eggs
1 c. grated sharp Cheddar cheese
1 stick butter
1 tbsp. sugar
1 tsp. salt

Wash and cut up squash; boil until tender and drain thoroughly. Mash squash with large spoon or use food processor. Add all ingredients except half of butter to squash. Pour mixture into baking dish, then melt the remainder of the butter and spread over the top; sprinkle with additional crumbs. Bake at 375 degrees for approximately 1 hour or until brown on top.
