MAKE AHEAD MASHED POTATOES 
8 to 10 lg. potatoes, peeled
1 onion, chopped

Boil until soft; drain and mash. Add:

1 stick butter
1 (8 oz.) pkg. cream cheese
1/2 c. sour cream
Salt & pepper to taste

Place in Corningware baking dish, dab of butter on top. Can be used immediately or kept in refrigerator for a few days and bake at 350 degrees for 30 minutes.
